If you are on the hunt for a recipe to enjoy copycat PF Chang's lettuce wraps made healthier so you can enjoy them guilt free, look no further! I like to pack them full of flavorful veggies like eggplant, mushrooms, peppers and carrot to lighten up the chicken mixture and add a rainbow of colors and textures. A deliciously sweet and salty sauce glazes the mix while crunchy cashews and green onion add the perfect finishing touch.

I'm not here to knock PF Chang's lettuce wraps, they ARE delicious after all! However, with any recipe I always look for ways to lighten them up. So in order to make these copycat PF Chang's lettuce wraps healthier, I like to cut the chicken mixture and load it up with eggplant, bell pepper, carrot and mushrooms. You'll love my version and can enjoy it guilt free!

ingredients and substitutions

Like everything I make, I wanted to make sure this recipe was endlessly customizable for you. Here are some ideas on how you could switch things up based with what you have on hand and make it your own!

  • Ground Chicken-I opt for ground chicken thighs because they don't dry out as much but feel free to use ground chicken breast or ground turkey in this recipe. If you want to keep it vegetarian, just swap out the meat for crumbled tofu!
  • Butter Lettuce- I love buying the butter lettuce that comes with the roots in tact since I can keep it fresher for longer. Romaine also works extremely well and you could also go crazy with some Swiss chard leaves too. I like to double up on the lettuce leaves because butter lettuce is pretty tender and can rip easily. Plus, you get extra greens in your diet that way!
  • Ginger and Garlic-I always opt for mincing fresh garlic and ginger but if you're in a pinch you can buy the kind in a jar. You can also substitute with 1 teaspoon of ground ginger or garlic each if you don't have fresh on hand.
  • Eggplant and Mushrooms-I love the meatiness that these two veggies add here,, just like they do in my harissa eggplant skillet recipe. Plus it helps sneak some veggies in so your kids (or partner!) eat healthier without even realizing it! If you're not a fan of these veggies you could easily use zucchini or yellow squash instead.
  • Plum Sauce-As I said above, you should be able to easily find plum sauce in any grocery store. If for some reason you can't, or just don't have it on hand, you can try substituting with mango chutney, plum preserves, or a tablespoon of brown sugar. You can also just use extra hoisin sauce to make up for it.
  • Sambal Oelek-I love the little bit of heat that this chili sauce adds, and I usually make mine with almost a tablespoon. If you're wary of the heat, start with one teaspoon and give it a taste before adding more.
  • Cashews-I prefer unsalted cashews in this recipe but peanuts are an excellent second choice! If you have a nut allergy you can just leave them out all together.

how to make these lettuce wraps healthier

Lucky for you this is a one pot meal! Your dishwasher will thank you. However since it makes such a large amount and you don't want to overcrowd the pan and inadvertently steam the chicken or veggies rather than brown them, so I suggest working in batches.

  • First you will brown the chicken in 1 tablespoon of high heat oil in a deep skillet. While that is cooking until no longer pink, you can prep your veggies on the side.
  • Once the chicken is cooked through, you can remove it from the pan and add your ginger, garlic, eggplant, mushrooms and peppers.
  • Browning the chicken
  • Sautéing the veggie mix
  • Chicken gets added back into skillet along with sauce.
  • Once these are soft, you add the chicken back to the skillet and start adding the components of the sauce.
  • Stir to combine well and let the sauce get nice and sticky, about 3 minutes on low heat.
  • At this point I add the shredded carrots to the mix. If you add them at the same time as the eggplant mix, you run the risk of the carrots getting too soft and losing their bright orange color. By waiting until the end, they retain not only their crispness but their vibrancy, ensuring a delicious texture.

How to prepare lettuce wrap sauce

The ingredient list for the sauce is not for the faint of heart! However, if you make Asian inspired dishes often, chances are you already have all of these on hand. With the exception of the plum sauce, I always keep these ingredients at my fingertips because you will see them over and over again in Asian cooking. Here's what you'll need:

  • Soy Sauce or Tamari
  • Sesame Oil
  • Sambal Oelek chili sauce
  • Rice Vinegar
  • Hoisin Sauce
  • Plum Sauce

You should be able to find these in the Asian section of any supermarket, not just specialty stores. If for some reason you can't find the plum sauce, you can use solely hoisin, but it won't have as sweet of a flavor. In that case, I would supplement with a little plum preserves, mango chutney, or even a tablespoon of brown sugar.

Can you meal prep these lettuce wraps?

The best thing about this recipe is that it makes enough for leftovers and the flavors improve over a day or so! I love to meal prep these healthy chicken lettuce wraps in a compartmentalized container that can keep the saucy chicken separate from the crisp lettuce leaves.

This container I found on amazon has been a lifesaver. I recommend eating these wraps within 3-4 days.

Can you make this recipe vegan or vegetarian?

Of course! I would recommend doubling up on all of the veggies in this list, or adding in some of your favorites like zucchini and squash. You can also substitute tofu for the chicken in this recipe which I have done many times with great success! Luckily, if you swap out the chicken, this recipe also becomes vegan!

Ingredients
  

  • 1 lb ground chicken or turkey
  • 1 tbsp avocado or grapeseed oil
  • 2 cups cubed eggplant (no need to peel)
  • 1 cup chopped cremini mushrooms, stems removed
  • 1 cup diced bell pepper
  • 1 cup shredded carrot
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, peeled and minced
  • 1 head butter lettuce
  • 1 cup chopped cashews
  • 2 green onions, sliced diagonally

Sauce

  • ⅓ cup hoisin sauce
  • ⅓ cup plum sauce
  • 1 teaspoon sambal oelek (add more to taste)
  • 2 tablespoon Tamari
  • 1.5 tbsp rice vinegar
  • 1 tablespoon sesame oil

Instructions
 

  • In a deep skillet, heat 1 tablespoon of high heat oil over medium high heat. Add ground chicken and cook until browned and no more pink is showing, about 5-7 minutes. Remove chicken from skillet.
  • Add 1 tablespoon of sesame oil to pan and lower heat to medium. Add eggplant, mushroom, bell pepper and ginger to the skillet and saute until vegetables start to soften, about 5 minutes. Add garlic and cook for 1-2 more minutes, taking care not to let it burn.
  • Add chicken back to the pan along with the vegetables. Reduce heat to medium low. Add in ⅓ cup hoisin sauce, ⅓ cup plum sauce, 2 tablespoon soy sauce, 1.5 tablespoon rice vinegar, and 1 to 2 teaspoons of sambal oelek. Stir well to combine and cook until mixture is sticky and coats the mixture well, about 2-3 minutes.
  • Stir fresh grated carrot into the mixture.
  • Serve by scooping mixture into butter lettuce leaves and top with crushed cashews and fresh green onion.

Notes

  • Mix will keep for 3-4 days.
  • You can substitute ground turkey for ground chicken.
  • You can freeze mixture for up to three months. 
  • If you don't have plum sauce, you can use extra hoisin, or substitute with plum preserves, mango chutney, or 1 tablespoon brown sugar.
  • If you don't have fresh garlic or ginger, you can substitute with 1 teaspoon of ground garlic or ginger each.

Arugula and pistachio pesto pasta salad with burra Arugula and pistachio pesto pasta salad with burrata for that time when you need an impressive cold dish to bring to a potluck, bbq or graduation party.  The pesto is worth making from scratch because the peppery arugula mixed with the buttery pistachios makes for incredible flavor.  And the food processor does all the work for you!  Keep the toppings simple with extra arugula, cherry tomatoes and creamy, dreamy burrata for a simple but elegant dish. 

Arugula Pistachio Pesto Pasta Salad
8 cups cooked pasta like rotini
1 cup cherry tomatoes, halved
2-3 balls of burrata torn into pieces
2 cups packed arugula
1 cup roasted pistachios 
2 cloves garlic, minced
1 Tbsp lemon zest
1/4 cup lemon juice (~2 lemons)
1/2 cup grated parmesan
pinch red pepper flakes
1/2 tsp flaky sea salt or 1/4 tsp kosher salt
1 cup spinach
6T extra virgin olive oil

Combine the arugula, pustachios, garlic, lemon zest, lemon juice, parm, red peoper flakes, and salt in a food processor and pulse a few times to combine. Drizzle in the olive oil with the motor running. If it looks a little brown from the pistachios you can add a cup of spinach and blend until smooth-ish. Toss with your cooked pasta and cherry tomatoes. Top with torn burrata and extra arugula. Drizzle with evoo and top with cracked black pepper and flaky salt.

Strawberry Quinoa Salad 
4 cups cooked quinoa
1 can garbanzo beans, rinsed and drained
1 cup diced cucumber
1 heaping cup of quartered strawberries
1 small shallot, minced
1/4 cup chopped fresh parsley
3 tablespoons chopped fresh mint
1 lemon, zested
3 tablespoons lemon juice (about 1 and a half lemons)
3/4 cup roasted pistachios
1/2 cup crumbled feta
3 tablespoons extra virgin olive oil
1 teaspoon sea salt
Cracked black pepper

Combine all the ingredients in a bowl and toss gently.

Roasted baby bell peppers with creamy burrata and a zippy lemon basil vinaigrette is such an easy appetizer to assemble but packs some serious wow factor.  It’s the ultimate fancy without the fuss side dish! 

Roasted Bell Pepper and Burrata Salad

1 large bag of baby bell peppers (~1.5lbs)
2 tbsp olive oil
1/2 teaspoon salt and pepper

Roast at 425 for roughly 20-30 minutes or until deeply colored in spots and softened

Lemon Basil Vinaigrette
* 2 cup fresh basil
* 1 whole lemon, zested and juiced
* 2 whole garlic cloves
* 1 teaspoon kosher salt
* ¼ teaspoon black pepper
* 2 tablespoon red wine vinegar
* ½ cup extra virgin olive oil

Combine the fresh basil, lemon zest, lemon juice, garlic cloves, salt and pepper into a food processor or blender.  Pulse thoroughly to combine.

On a platter, scatter a few handfuls of arugula and drizzle with the lemon basil vinaigrette.  Top with the roasted peppers.  Tear about chunks of burrata and dollop on top of the peppers.  Drizzle with more lemon basil vinaigrette.  Sprinkle with sea salt, cracked black pepper and optional micro greens.

1/2 lb salmon filets, bones removed
6 cups shredded kale
1 everything bagel, cubed
1 avocado, sliced
1 tbsp everything but the bagel seasoning, divided
1/3 cup caesar dressing
2 tbsp olive oil
1/3 cup shaved or shredded parmesan
1 tsp olive oil
INSTRUCTIONS
 
•Preheat oven to 400 degrees F
•Toss cubed everything bagel with 2tbsp olive oil and 2 tsp of everything but the bagel seasoning. Spread onto a sheet pan and bake for 10-12 minutes, rotating the pan and giving it a little shake halfway through.
•Bake until golden crown and crunchy throughout with no softness in the center of the cubes.
•Spread a teaspoon of olive oil onto the salmon filet. Sprinkle the remaining 1 tsp of everything but the bagel seasoning over the top of the salmon. 
•Bake at 400 degrees for 8-10 minutes or until cooked to your liking.
Depending on the thickness of your filet, 8 minutes should cook through to medium rare. To be cooked well done, it will take closer to 10-12 minutes.
•While the salmon and the croutons cook, put the shredded kale into a bowl. Drizzle over the caesar dressing and massage it into the kale using your hands.
Massage well for 1 minute and then left the kale rest for 5-10 minutes while the items in the oven finish cooking.
Assemble salad by dividing kale into two bowls. Place a salmon filet on the top of each and scatter around croutons. Shave or grate parmesan over the top. Place sliced avocado around and serve with a fresh lemon wedge.

It is so incredibly refreshing and light but has a tendency to sneak up on you so pace yourself and make sure you enjoy it with a heaping plate of food! 🥂

Blend together 1 1/2 cups halved fresh strawberries and 1/4 cup Fresca until smooth.  In a pitcher, add your strawberry puree, 1 bottle of rose, 1/2 cup vodka, 1/2 cup sliced strawberries, 1/2 cup fresh raspberries, 1 sliced lemon, the juice of 1 lemon, and 1 cup fresca.  Stir together.  Add ice to your glass and fill with sangria, leaving room at the top for a little floater of fresca or soda water to serve.  Garnish with edible flowers such as chamomile, violas or pansies.

These jalapeño corn fritters are my son’s favor These jalapeño corn fritters are my son’s favorite dish I make and they will be yours too! They are the perfect side dish for salmon, chicken, steak, you name it! 🌽. Sweet corn packed with fresh herbs, cheddar and hint of heat.  Did I mention how easy they are?! There’s nothing better! 🤌🏻

Jalapeno Corn Fritters

3 ears of corn kernels (~2 cups)
1 shallot, minced (~1/4 cup)
1/2 jalapeno, seeded and minced
2 cloves garlic, minced
2 green onions, sliced
1/4 cup chopped cilantro
1/2 tsp kosher salt
1/2 cup grated white cheddar
1/2 cup all purpose flour
2 eggs

Mix everything together in a mixing bowl until flour and eggs are incorporated.  If you have time, let the mix chill in the fridge for 10-15 minutes.  Over medium high heat, add 2-3 Tbsp of avocado oil to a pan.  Using a 1/3 measuring cup, scoop out corn fritter batter into pan and smash into a flat disc.  Pan fry until golden brown on both sides.

The food processor does all the work for you, so you don’t need to turn on the oven on those hot summer days.  Serve with cucumber slices for your gluten free friends ❤️

Everything Bagel Smoked Salmon Dip
8oz flaky smoked salmon
8oz block cream cheese, softened
1 lemon zested and juiced
1/2 tsp garlic powder
2 tbsp sour cream
3 tbsp minced shallot
2 tbsp minced fresh dill
1 tbsp minced fresh chives
2 tsp everything but the bagel seasoning
1 tbsp capers 

In a food processor, combine smoked salmon, cream cheese, sour cream, lemon zest and juice and garlic powder.  Pulse until creamy but with small chunks of salmon.  Should not be a mousse texture.  Scrape into a bowl and stir in shallot, dill, chives, ebtb seasoning, and capers.  Taste for seasoning and add salt if needed.
